This blend consists of 50% Cabernet Sauvignon and 50% Petit Verdot grapes from the winery's selected vineyards, which were hand-harvested in a night harvest and transported to the winery before first light. After separating the grapes from the stalks, they first underwent cold maceration and then slow, controlled fermentation. After the extraction of flavors and color was complete, the wine was settled and each variety was aged separately in new French oak barrels for 18 months. The winemaker selected the seven best barrels from which he made a blend. The wine then went back into the barrels for an additional 6 months, after which it was bottled with only light filtration. The wine aged in bottles for an additional period in the winery's cellars in order to achieve the best balance of flavors. Wine tasting: The wine expresses in its flavors a fascinating combination of the two varieties originating from Bordeaux, the Cabernet Sauvignon contributing the backbone and freshness and the Petit Verdot contributing the characteristic black-purple hue with flavors of oval berries. The body of the wine is full and it is even surprising in its strength. After a few minutes in the glass, the wine will begin to surrender and soften.
